Location of vineyards: 16-25 years, 350 meters above sea level, SW orientation.

Soil: Schist, clay and sandstone.

Harvest: Hand-picked, end August.

Farming: Organic

Vinification: Directly pressed grapes. Spontaneous fermentation without the addition of yeast. Maturation and mixing (battonage) on fine lees. No filtration.

SO2 addition: 15mg/L

Residual sugar: extremely dry, brut nature

Alcohol: 13.0 % vol

Bottle: 0.75 L

The sparkling wine is pale lemon in color. The bubbles are tiny, active. Pronounced medium bouquet reminds of flowers, yellow fruit, peeled apples, and somewhat of yeast. Very dry sparkling wine, the taste of peeled apples predominates in the mouth, followed by a long aftertaste.
