This is how Matija describes the winemaking process: Selective hand picking in the early morning. The grapes are destemmed and left on the skins for 48 hours, then pressed and transferred to steel tanks where spontaneous fermentation begins. The wine is then gravity decanted into bottles where the fermentation process continues in each individual unfiltered/untreated bottle.
